I crave waffles endlessly. All waffles, really. But most especially authentic Belgian waffles, cooked with the crunchy confetti of rock sugar.
Today, during one particular fit of cravage, I wondered if I could make a no-guilt Belgian waffle, full of raw coconut sugar. Combining it with oodles of vibrant greens. Essentially, a green smoothie in a waffle. With the added benefits of gluten-free, paleo and hi-protein superboosting. The results are below. And they are divine.
4-Ingredient Green Smoothie Waffles

Makes 1 waffle | 10 minutes
- 1/4 cup creamy raw almond butter
- 2 eggs
- 2 cups baby spinach or kale
- 2-3 Tbsp raw coconut sugar
Place almond butter, eggs and spinach in a blender. Puree. Fold in coconut sugar. Pour into a heated waffle iron which has been sprayed with nonstick coconut oil spray. Cook until golden. Remove. Enjoy or top as desired.
Topping Ideas: Stir together a dollop of sour cream and honey. Top with fresh raspberries, golden flaxseeds and chia. Or chopped pistachios and a smackling of coconut sugar.
