Breakfast. They say it's the best meal of the day. But, I dunno. I've never been a big breakfast eater.
Which they say is okay. Don't like breakfast? Don't eat it. Let the natural rhythms of your body tell you when it's time to eat your big meal o' the day. For me, this is usually right around 2pm. Which makes no sense whatsoever in my life. But, if I'm allowing my body to do what it loves, it's coffee and water until 11am. Then a handful of macadamias or spoonful of almond butter. And that all tides me over until I have the gut starts screaming for lunch around 2ish. At which point, if I'm being reallyreally good (and honest) I'll down a hot plate of Chicken Tikki Masala from Whole Foods, oodles of greens and a creme brûlée. With kombucha to wash it all down.
Is this a diet? It should be. I'd eat it daily.
All of that lunch chatting aside, I think one of the true reasons I'm not a breakfast eater, is because most go-to options are either 1) high carb or 2) take too long to prep.
And so, most days I go without.
BUT YOU DON'T HAVE TO.
Because whether you're on-the-go or a work-from-home-er, like myself, this easy easy peasy squeezy sausage 'n apple skillet is about to make your head explode.
In the good way.
(When head explosion is ever a good thing, I know not. Let's paragraph up there that part didn't happen.)
So seriously. Grabbeth thyselfeth a skillet. Melt in some coconut oil. Toss in diced apples and breakfast sausage. Serve it all up with an avocado or nine.
Then creme brûlée for dessert.
Yay for us and our exploding heads.

Soooo simple and absolutely splendid. Keep everything on hand to whip up this quick breakfast anytime you're hungry. You can toss it all in a pan, get your kids out the door, curl your hair and toss on heels, all while this baby cooks. Hot, yummy, healthy breakfast for your, clever human.
Makes 2 servings | 10 minutes
- 1 Tbsp coconut oil
- 1 red apple, cored and diced.
- 1 green apple cored and diced
- 4 linked pre-cooked chicken sausage, sliced.
- Parsley or basil for garnish (optional)
- Salt and pepper to taste
In a skillet over medium-high heat, melt coconut oil. Toss in apples and sausage, cooking until apples are tender and sausage is hot. Transfer to serving bowl. Garnish with basil, if desired. Salt and pepper to taste. Enjoy with an avocado if desired.
FLAVOR TWISTS
- Sweet Str-in. Toss in baked sweet potato cubes for a tasty twist.
- Go bacon. Instead of sausage, toss in 1' pieces of nitrate-free bacon. Brown the bacon first and drain any fat before adding the apples for best results.
- Add chicken. Toss in diced or sliced cooked chicken (rotisserie chicken makes a great shortcut!) for an extra-hearty dish that tastes great for dinner.
