I have this lovely little Food Photography Facebook Group (come join us!) and asked them all to help me. Because the Day 17 #365Recipes prompt was "parfait" and I'd narrowed ideas down to 4. But just could.not.choose.
I decided to ask the crew. They're a group of seasoned food bloggerz and recipe developerz. You can tell they're pros, because they insist on using a 'z' at the end of their titles.
So posted this:

I'm developing my 'PARFAIT' idea for Day 16 and have narrowed it down to the following, but am having literally the hardest time deciding which wins. Any of the following screaming at you to "eat meeeeee"?
A. Momofuku Inspired Birthday Cake Parfaits with Pink Beet Buttercream
B. Brownie Bite & Vanilla Gelato with Caramel Peanut Popcorn Parfaits
C. Luxardo Caramelized Cherries, Burrata & Pistachio Toast Parfaits
D. Maple-Syrup Drizzled Waffle (or French Toast), Bacon & Blueberry Breakfast Parfaits
And those bastards.
They coulda picked the cheesy parfaits.
Or the beet-kissed buttercream parfaits.
But you KNOW they picked the peanut-popcorn-bourbon-caramel-custard parfaits.
During the making of which required me to taste many, many tastes of bourbon.
And I take no responsibility for anything that happened thereafter.
This is entirely their fault. And if you, too, can't stop eating bourbon. And bourbon caramel. And popcorn. And peanuts. And brownie bites. And parfaits. (ALL THE PARFAITS!)...

You're going to have to take it up with my people. This glorious distaster is 100% on them.

Smoked Bourbon Caramel, Brownie Bite & Peanut Buster Popcorn Parfait
6 servings | 20 minutes
- 1 stick butter
- 1 1/2 cups brown sugar
- 1/2 cup heavy cream
- 1/4 cup bourbon
- 1 Tbsp Mexican vanilla
- 1 teaspoon Smoked Maldon Sea Salt (plus more for garnish)
- 3 cups popped popcorn (I used Boom Chicka Pop Kettle Corn)
- 1 cup peanuts (I used a mix of Spanish and honey-glazed)
- 1 (9.7 oz) box , crumbled Brownie Bites
- 2 pints vanilla bean custard or gelato
In a medium pot, melt butter, brown sugar, cream and bourbon. Bring to a boil, stirring just until the mixture begins to foam and thicken. Remove from heat, stir in vanilla and sea salt. Toss half of the caramel sauce over the popcorn and peanuts.
Spoon a small amount of the popcorn-peanut mixture into the bottom of 6 small glasses or jars. Top with brownie bites, ice cream, more popcorn-peanut mixture. And finally, drizzle with caramel sauce and a sprinkling of sea salt. Enjoy!!!!
