Two weeks ago, I threw my back out twerking.
My Instagram 'suggested' feed is full of Nicki Minaj accounts.
So, when it came time to make Valentines day cookies for the bae, I mean, obvs.
This one is for the boys with the boomin' system.
It was all Minaj lyrics, all the time.And though the BF wasn't quite sure what to make of all these sparkling pinky purple, kawaii colored, coconut-rum laced cookies, I like to believe everything in my life has prepared for the creation of this recipe.
Or some overly dramatic, wildly serendipitous thing such as that.
Good news for you: you don't have to love Nicki (although, I mean, you DO love her, right? That gurl is a goddess in all the ways of all the ways. DON'T YOU JUST LOVE HER?!!) because this recipe is ready to be cutout into any old shape you desire.
Grab cookie cutters. Use a mason jar lid like my mama did.
Or nab a paring knife and carve out a lovely little message for your bae.
Then twerk it.
Just don't throw yo' back out, likin' I did.

If you're new to "flow" icing, don't panic. I've got you.
Wilton Color Flow mix makes pretty flow icing a frickin' snap. Just whip everything up in a stand mixer and pipe from an icing bag (or even a ziptop baggie). You seriously can't mess this up. Even though fancy piped cookies sometimes feel like a no-go with how gourmettissee they look.
Grab the sugar bowl, Shaggy. Go straight up super bass on your V-day. Rock side to side. Make your own Minaj cookies, or carve out a batch of something totally your own.

Coconut Rum Sugar Cookies Cut-Outs

FOR THE COOKIES:
- 1/2 cup butter, softened
- 3/4 cup white sugar
- 1 egg
- 1 teaspoon baking powder
- 1 3/4 (plus 1/4) cup flour
- 1 Tbsp Caribbean coconut rum (or vanilla)
FOR THE ICING:
- 1 lb (4 cups) powdered sugar
- 4 Tbsp Wilton Color Flow mix
- 1/4 cup Caribbean coconut rum (or water)
Heat oven to 350ºF.
In a stand mixer, beat butter, sugar and egg until fluffy. Mix in baking powder, flour and rum. Roll out, adding more flour, as needed, until the dough is not sticky. Use a cookie cutter to cut designs, or use a paring knife to create DIY letter cutouts.
Transfer to a parchment-lined baking sheet. Bake for 9-12 minutes, just until the edges of the cookies turn golden brown. Allow to cool completely before frosting.
For the icing: mix all ingredients together in a stand mixer, beating until whippy. Tint, as desired. Transfer to an icing bag, pipe and decorate.
