No Recipe Required: Parsley Lemon Baked Cod
MAKES: As much as you want | TAKES: About 20 mins
INGREDIENTS
- lemons, sliced
- cod filets, cut into serving-sized pieces
- butter, 1 pat per filet
- grape tomatoes, halved
- garlic, like 4-6 cloves, chopped
- olive oil, a butt ton
- salt and pepper
- fresh curly parsley, lots, finely chopped
Heat oven to 400ºF. Place lemons in the bottom of a baking dish. Top with cod. Top each cod filet with a pat of butter. Sprinkle with tomatoes and garlic. Drizzle with olive oil. Salt and pepper generously, but don't overdo it.
Bake until cod begins to flake. About as much time as it takes to pour and drink a good glass of red wine. Top immediately with parsley. Pile on plate and enjoy.
