I like my dinners like I like my trips to the gym: fast.
So when I discovered One Pot Pastas, where a handful of good ingredients go into a pot and 15 minutes later, dinner is served, I was instantly hooked.
And while we've made a few awesome one pot meals over the years, this One Pot Chicken Taco Alfredo is in-sane-o delicious.
Chicken, parmesan, taco seasoning and pasta. We kept it simple, adding only tomatoes to the dish (though a 1/2 cup of corn and/or black beans would also be tasty), and topping it off simply with cilantro (though adding diced green onions would also be good).
The result is a superquick family-style meal that tastes both familiar and surprising. A splendid combination of creamy, spicy and hearty.

One Pot Chicken Taco Alfredo
4 servings | 15 minutes
- 2 cooked or grilled chicken breasts, diced
- 8 oz cavatappi pasta
- 1/2 cup diced tomatoes
- 1 packet taco seasoning
- 3 cups chicken broth
- 1 cup heavy cream
- 3/4 cup parmesan
- 1/4 cup chopped cilantro (for garnish)
Place all ingredients (except the cilantro) in a large pot. Cover and bring to a boil, stirring every 2-3 minutes, for 12-15 minutes or until pasta is tender. Garnish with cilantro. And serve!
