Every dessert you love, baked together in one cast-iron skillet. This insane combo of boozy brownies, topped with mint Oreos, topped with cookie dough, topped with mint M&M's can only be topped with ice cream and chocolate sauce. AMIRIGHT? An absolutely delicious dessert, the kind of sweet you crave when you decide to indulge.
Well. I'm afraid I've gone and done it.
Just, like, over the topped it so hard, there is nothing left for me to do with my life.
I'll be selling off my equipment, wrapping myself in child's pose over a bowl, and forking into brookies for the rest of my life. What more is there?
It all started when we flipped the calendar and saw St. Patty's Day coming. We needed something green to eat, and we needed it stat.
Usually this means mint brownies. Because: YUMMMM. Right?! RIGHT?!!
But Jacob loves dark chocolate.
And Alyssa loves ice cream.
And Hukee always wants chocolate chip cookies.
And Becca and Gabe are over-the-moon in love with Oreo's.
So out came the cast iron pan, and in went all of the things.
And out came my road to retirement. My piece de resistance. The most perfect dessert that has ever been ever'ed.
And it was so easy. Just mix, top, bake, top, fork.
Give this one a try! But only if you're ready to throw in the towel on your life. Because after this high point, it's gotta be all downhill from here.
{But, ohhhh, what a delicious downhill it shall be. ;)
Boozy Mint Oreo Brookies
Serves 6 | About 1 hour
- 10.25 oz brownie mix
- 1 egg
- 1/3 cup Irish cream or creme de menthe (or melted butter)
- 16 mint oreos
- 16 oz choc chip cookie dough
- 1/2 cup mint M&M's
- nonstick spray
Heat oven to 350ºF.
In a bowl, mix together brownie mix, egg and liqueur. Spread into a cast iron skillet generously coated with nonstick. Arrange mint Oreos on top, then cookie dough and M&M's. Bake for 30-40 minutes, or until the center of the brookies have set and spring back when touched lightly. Remove and cool before slicing, for best results.
If desired, top with ice cream and chocolate syrup. Eat straight from the skillet, if you're feeling crazy like that.
