Red, white and blue vegetables arranged on pieces of naan, then baked until the burrata cheese is bubbly and golden. These personal-sized pizzas are perfect for patriotic holidays. But delicious enough that you won't want to wait until a day of celebration to enjoy them.
Despite the fact that my life revolves around food, and food revolves around holidays, I'm kind of a holiday deadbeat. Just straight up forget to look at the calendar for months on end. Then suddenly, it's the day before Memorial Day or Labor Day, and all the world has plans. But not us. Because I just totally forget about special events sometimes.
So this year, I was determined to do something about it. Circled upcoming, exciting dates with big red Sharpie hearts. Made it part of my morning routine to peek at the calendar and remember whatever was on the horizon.
Is this what 40-year-olds do? Guess so.
Apparently, 40-year-olds also feel like a kid again when July the 4th appears on the schedule. Pull out the star cookie cutter. Slice everything from mangoes to watermelon into adorable, edible star-shaped garnishes. Then do it all over again with red bell peppers and purple potatoes.
The end result, this delicious Chicken Artichoke Purple Potato and Red Pepper Pizza. Drizzle with garlic and olive oil. Topped with a creamy burrata cheese. Which, if you haven't yet pizza'ed with burrata cheese, your life is about to get made twice.
Come, let us pull out the star-shaped cookie cutter.
We have a holiday on the horizon, just begging for this purty lil' pizza.
Red, White & Blue Artichoke Chicken Pizza
4 personal-sized pizzas | 20 minutes
- 3/4 cup purple potatoes
- 4 naan
- 2 tbsp garlic puree
- 4 Tbsp olive oil
- 2/3 cup fire-roasted artichokes
- 2 grilled chicken breasts, sliced
- 16 oz burrata
- 2 red bell peppers
- 3/4 cup cherry tomatoes
- Oregano flowers & basil for garnish
- Salt and pepper, to taste
Heat oven to 425ºF.
Place potatoes in microwave, cook for 3-6 minutes, or until tender. Remove and slice. Set aside.
Place naan on a parchment lined baking sheet. Spread garlic puree atop each naan, drizzle with olive oil. Top with artichokes, sliced chicken and burrata.
With a mini star cookie cutter, cut bell peppers into star shapes. Arrange on pizzas with purple potatoes. Place cherry tomatoes atop (halved, if desired).
Bake on bottom rack for 18-22 minutes, or until burrata is melted and bubbling.
Garnish with fresh basil, oregano flowers (if desired), salt and pepper.
