Sausage, potatoes and eggs, baked together until piping hot, then served with chilled tomatoes makes a deliciously simple breakfast. Try this easy meal for brunch parties, lazy weekend dinners or any time you're craving comfort food.

Breakfast for dinner is one of our favorite ways to eat breakfast. And dinner. 

But the 5pm rush can be so hectic, I'm not always up for some elaborate, 82-pan cooking scheme. Enter, this One Pan Breakfast Bake.

Wildly simple, with all the best savory breakfast flavors, this combination of wedge potatoes, chicken sausages, eggs with creamy soft-cooked yolks and tomatoes makes for a wonderful meal. Added bonus: they make for a quick meal, too. No recipe required (but you can find all the cooking details at the bottom of this post.)

Food Photography Geek-Out Moment

These images were shot with a Canon 5D Mk III paired with a SigmaArt 50mm f/1.4 Lens. (There is a Nikon version of this lens, as well). I use the SanDisk Extreme 128GB SD Card for fastest capture and safe-keeping.

One-Pan Breakfast Bake

4 servings | 30 mins total

  • 1 (24 oz) bag frozen oven fries (I used Alexia Rosemary Oven Fries)
  • 4-5 Italian Style Chicken Sausages (I used Aidell's)
  • 2 Tbsp olive oil
  • 4-5 eggs
  • 5 small tomatoes, halved
  • salt and pepper, to taste
  • rosemary or parsley, for garnish

Heat oven to 400°F

Line a sheetpan with parchment paper. Place fries and sausages on parchment, drizzle with olive oil. Bake for 15 minutes, just until sausages are browned and fries are cooked through. 

Remove sheetpan from oven, crack eggs on top. Return to oven and cook 5-7 minutes, just until egg whites are cooked. Remove from oven, place tomatoes on top. Salt and pepper to taste. If desired, garnish with rosemary or chopped parsley.
