A basic dinner, but so delicious. Make this one a staple on your weekly rotation. Butter, garlic, chicken and mushrooms make for one of the best (and easiest) dinners of your life.

Do you ever run out of steam before dinnertime? I do. And I'm a foodie. Like, for a living. So I can imagine I'm not the only one. Surely, somewhere in the world, there is a non-cooking-loving soul that see's the clock tick to 4:59 and feels exhaustion rise at the mere thought of figuring out what's for dinner.

My dudes, if that is you, I've got you covered.

This easy Chicken and Mushroom Sheetpan dinner takes zero brain cells to make. And it's delicious. Like, crazy baby delicious.

Which isn't a thing. Babies aren't crazy, they're cute.

But stick with me. Sometimes my cooking words get weird.

If you love buttery saute'ed mushrooms. And you don't mind finding some new way to enjoy a chicken breast, then boom. Dinner is done.

Grab a sheetpan, line it with parchment, lay out a handful of super basic ingredients, and toss it all in the oven. Then grab a glass of wine (okay, bourbon. Grab a glass of bourbon if you're me). Then just wait for it.

When this baby comes outta the oven 20ish minutes later, you'll have forgotten the prep process (because it's literally that short. Plus also, bourbon). Will feel like someone else cooked you dinner. And will start kissing everyone in site.

And there I go again with the baby metaphors. And now kissing? 

Definitely weird.

But worth it.

Like, way worth it baby.

Food Photography Geek-Out Moment

These images were shot with a Canon 5D Mk III paired with a Canon 24-70 f/2.8 . The light was waning, our first week of shorter-days, low-light and cooler weather. So I arranged the scene as close as possible to a diffused west-facing light (normally, I set up in front of South facing light, but in the evening, the West facing light is so glowy and irresistible.)(Never be afraid to follow the light, as needed, to get your shot). A tripod was used so I could turn my shutterspeed as low as possible. I believe I took this down between 60-80 to ensure enough lighting.

The backdrop was created using the Bea Lubas technique, which you can learn over at TwoLovesStudio. Once I tried this technique, I painted over 5 of my old backdrops, because I loved it so much. This one was painted over a precut Home Depot chalkboard, with Amy Howard One Step Grey and White Paint. This set of FolkArt Home Décor Chalk Paint is also a great option, a little more cost-friendly, too.

Baked Chicken and Mushroom Sheetpan Dinner

Butter, garlic, chicken and mushrooms make for one of the best (and easiest) dinners of your life.
Ingredients
  • 4 thin-cut chicken breasts
  • 12-16 ounces cremini or baby bella mushrooms (cleaned and dried)
  • 1 stick (1/2 cup) butter, melted
  • 1 1/2 Tbsp garlic puree (or 3 large cloves, chopped)
  • 1 teaspoon paprika
  • salt and pepper
  • fresh chopped parsley (for garnish)
Instructions
Heat oven to 400°F. Line a sheetpan with parchment paper. Place chicken and mushrooms on top.Mix together butter and garlic, drizzle atop chicken and mushrooms. Sprinkle with paprika, salt and pepper. Bake for 20-25 minutes, or until chicken is cooked through. Garnish with parsley and enjoy.
