Superfood Protein Coffee Latte

Coffee gets superpowers with just a few simple ingredients. In just a matter of minutes, kick off your day with a deliciously creamy morning cup of joe packed full of nutrients, all thanks to Bob’s Red Mill Protein Powder.

It was one of those days. So much to do. Which seems to be the norm around here, just always so much to do. Kids and meals and managing a business. Trying to stay healthy. Carpooling. Attempting to find the time to read—well—anything in a day. And on this particular day, all of it felt like soo much to do. Too many to do’s.

So I drop the kids off at school, come back home, crawled back into my bed, and start mindlessly scrolling. Know how when there’s a list of things a mile long, but then you find yourself zoning out to pass the time and procrastinate all of the things? Yeah. This was me.

Somewhere in the middle of trying to hide out from the heavy weight of all of my responsibilities, I stumbled across the myth of Athena.

I’d always thought Athena was just the goddess of war. But as I start reading, her list of things she’s in charge of is EPIC.

Like: whaaaa? That was ALL THE THINGS.

Something happened when I got to the end of that list. I realized having a lot of things on your plate is JUST ANOTHER DAY IN PARADISE. It means you’re needed. It means you’re capable. It means you CAN.

And from that point onward, I decided to go full Athena on life. No more complaints, only CAN DO’s.

But to meet a big day, you’ve gotta start the morning off RIGHT. So I’ve put a lot of focus on dialing in a serious morning routine that works.

The Athena Morning Routine

After lots of trial and error. The THREE morning things that help me consistently wake + rock-it-like-Athena is:

  1. Wake early & make the bed right away. That starts the day with an accomplished task.

  2. Move that body for at least 20 minutes. Walk the ‘hood, run the block, do yoga on the deck. Whatever it is, get movin’ on the daily.

  3. Make an Athena Latte. This simple superfood-and-protein spiked coffee is a creamy, dreamy, high-energy way to get satiated.

How to Make an Athena Latte

Blend Bob’s Red Mill Protein Powder into a cup of coffee with a tablespoon of coconut oil. And you’ll instantly get a hot cup of creamy coffee, superboosted with protein, fiber AND probiotics. All of that in a scoop of Bob’s Red Mill protein powder.

I’ll prep it in a mason jar with a hand blender, or if I’m making several servings at once, I’ll stick it all in a hi-speed blender and puree until frothy.

Athena Coffee

Serves 1-2 | 5 minutes from start to finish

  • 1 cup brewed coffee, piping hot

  • 1 tbsp coconut oil

  • 2 scoops Bob’s Red Mill Protein Powder (chocolate or vanilla)

Combine coffee, coconut oil, and protein powder into blender. (Alternatively, you can use a small hand blender.) Blend until ingredients are well combined, and coffee appears frothy.

Pour into a mug and enjoy!
