4-Ingredient Coconut Crunch Rawnola

Ever since my buddy, Thor, talked me out of being perma-vegan, I try to eat low-carb, paleoish. Which means, boxed cereals are out. But that's a-ok. Because rawnola is in. And it's hella easier to make a batch of this yummy stuff than to it is to run to the grocery anyway. Eat it by handfuls on bike rides or toss it atop Smoothie Bowls. Yummaroo.

4-Ingredient Coconut Crunch Rawnola

2-4 servings | 5 minutes

  • 1/2 cup shredded coconut
  • 1/2 cup sliced almonds
  • 1/4 cup hemp hearts or golden flaxseed
  • 2 Tbsp honey
  • pinch of salt

Place all ingredients in a hi-speed blender. Blend just until combined. Use immediately or spread on a parchment-lined baking sheet and allow to crisp overnight. Store in fridge for best results. Enjoy within 2 weeks.
