Nutella-Stuffed Protein Crepes with Berry Rum Syrup

V-day is coming up, my humans. Whatchyou got planned? 

When they were younger, I'd gift my kiddos with a stuffed animal in the morning. But something switched about 2 years ago, and suddenly they started gifting me. Like: parenting win to the max.

I woke one morning to a kitchen full of whispering kids and clunking pots and pans. The quick peek of one twin around the corner, "MOM! STAY IN BED, OKAY?" Then a delivery of scrambled eggs, french toast and wine (apparently this is what mama's need early in the a.m.) delivered while shiny-eyed tweens sat on the bed, anxiously watching me snarf down their lovingly prepared eats on a teetering tray.

Breakfast in bed is like a midsummer picnic--entirely impractical but damn if it doesn't make you feel loved.

So I figure, this year: I'll treat my teens to breakfast in bed. Because they've never been given such.

In our fam, we have a long-time tradition of crepe love. When we lived in Colorado Springs, we'd head downtown during Christmas, catch holiday family mass inside the peaceful walls of the Episcopalian church, then walk over in our fancy dresses and shiny shoes to a creperie owned by a Frenchman. Order whatever our hearts desired. 

It was, perhaps, our most expensive family outing of the year, but worth every bite. The kids still randomly and fondly remember that place with sighs and sweet "Remember when...crepes."

So, of course, crepes must be on the menu if I'm going to serve my babes breakfast in bed. But I didn't want to make just any old classic crepe. I wanted to make the kind of crepe I was craving.

Pulled out a box of our faves Kodiak Cakes Protein Flapjack Mix and mixed up high-protein crepes in, like, 4 minutes flat. Stuffed them to the gills with melty Nutella, then tossed together an easy microwaved rum-kissed Strawberry Maple Syrup.

A hefty sprinkling of powdered sugar on top. The kiss of a rose (petals). (Whoa: Seal Lyrics, watchout.) And that is what the kiddos will be given on teal colored trays I snagged last week at Ikea. 

Crepes. Bacon. Orange juice. 

I'll just save the side of wine for mommy.
