I have a thing for waffles. Tell me I'm not the only one?
Sunday mornings, the hankering gets particularly irresistible. Not sure what it is about Sunday mornings, I just wake up and it's like: waffles.
So, any chance to add waffles to the menu is a happy chance, in my mind. This week, after a particularly wild Wednesday, the BF and I snuck out for a beer and plate of Pulled Pork Nachos as a local dive bar. I hadn't eaten a thing all day. So that pub food was lyfe.
Next day, all I could think about was pulled pork nachos.
And waffles.
So, hi. See where this is going?
All the goodness of a pulled pork nacho, made with ready-to-go pulled pork, because some nights I do not have the will to cook (me: weirdest food blogger ever).
Tossed on some potato chips.
Topped with cheesy cheese and more cheese.
And avocado.
Tomato.
Pub love.
And it's not even Sunday yet. But prolly, I know what we'll be eating when it arrives.
Cheesy Pulled Pork and Potato Chip Waffles
6 servings | 30 mins
- 1 package frozen belgian waffles
- 1 (16 oz) package pulled pork
- 1 1/2 cups maple-bacon or jalapeno potato chips
- 2/3 cup BBQ sauce (whichever is your fave)
- 2 cups shredded cheddar-jack
- 1/4 cup fresh chives or scallions, diced
- 1 avocado, diced
- 1 cup diced grape tomatoes
- 1/4 cup chopped cilanto
- salt and pepper to taste
Heat oven to 400ºF. Pile pork and potato chips atop waffles. Drizzle with BBQ sauce. top with chives. Bake for 21-35 mins, or until the cheese is melted and gooey.
Top with avocado, tomatoes and cilantro. Salt and pepper to taste. Serve immediately and enjoy.
