15-Minute Monterey Smothered Skillet Chicken

Deliciously simple, this cheesy skillet chicken is loaded, smothered and served up in about 15 minutes. It's the perfect combo of flavors you already love, served in a delicious new way. During grilling season, try making this on the grill, instead of in a skillet! 

A good skillet meal really gets me through sometimes. After a full day of work, kiddos, carpooling and lyfe, it's sometimes impossible to think up a dinner idea. But pull out a skillet, cook up some chicken and suddenly, dinner is served.

Which is exactly what I love about this recipe. It's literally one of those pull-out-a-skillet, toss in a few things everyone loves, and boom. Dinner. 

Use whatever BBQ sauce is your favorite. Top with jalapenos, or don't (although: top with jalapenos...it's SOOO GOOOD), melt on cooked bacon and lots of Monterey-Jack cheese. Add easy-to-find garnishes, tomatoes, green onions, cilantro. And call the fam around the dinner table. Even your pickiest eaters will love this dish. And you will, too. Because: one pan perfect. 15 minutes total. That's how you do dinner like a boss.

15-Minute Monterey Smothered Skillet Chicken

4 servings | 15 minutes

  • 1 Tbsp olive oil
  • 4 boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1 jalapeno, sliced (seeds removed)
  • 8 slices cooked bacon
  • 4 slices Monterey-Jack cheese
  • 2 Tbsp chopped cilantro
  • 1/2 cup diced tomatoes
  • 1/4 cup diced green onions
  • salt and pepper

Heat olive oil in a cast iron skillet over medium-high heat. Salt and pepper chicken lightly, add to skillet, cover with half of the BBQ sauce, cook until golden (about 4-5 mins), then flip and cook the other side, coating again with BBQ sauce.

Once chicken is mostly cooked through, top with jalapeno slices, bacon and cheese. Cover and turn to medium-low. Cook until cheese melts and chicken is no longer pink in the middle. Top with cilantro, tomatoes and green onions. Serve and enjoy!
