I got my knickers in a happy bundle the other day, upon discovered Cotter Crunch had made her own Cocoa Puffs. And so, of course, I wanted my own cereal. As one does.
It's surprisingly simple to whip up a sweet vanilla dough which bakes into crunchy cereal puffs. The hardest part here is the rolling of all those itty bitty balls. So put on a podcast and prepare for a half-hour of rolling.
Pretend you're an Italian grandma, rolling homemade tortellini. Except it's cereal. With sprinkles. So, the metaphor won't be perfect. But it will be delicious.
A fun activity for a Saturday morning, once baked, enjoy within a week or so for best results.
With as tasty as this recipe is, chances are, it won't last but one big bowl and two happy pours of almond milk.
DIY Birthday Cake Cereal Puffs (Paleo)

- 1 cup almond flour
- 1 cup coconut flour
- 1/4 cup honey
- 1 egg
- 1 teaspoon baking powder
- 1 Tbsp apple cider vinegar
- 1 Tbsp vanilla
- 1/4 teaspoon salt
- 1 Tbsp coconut oil (melted)
- 1/4 cup naturally colored sprinkles
Heat oven to 325ºF.
Mix almond flour, coconut flour, honey, egg, baking powder, vinegar, vanilla, salt and coconut oil together. Fold in sprinkles, then roll about 1/4 teaspoon of dough into tiny balls. Place on a parchment-lined baking sheet.
Bake for 20 minutes, or until the balls begin to turn golden brown. Allow to cool completely before serving with almond milk.
