Tuna and White Bean Radicchio Lettuce Wraps

The fresh flavors and stunning colors of spring come together in this superquick lettuce wrap. Tuna and White beans are tossed with lemon juice, then served in Radicchio Lettuce Wraps with a drizzle of parsley, dill and basil vinaigrette. Gorgeous and so good!

There are times when you want to eat like a fancy person, but only have the patiences of a lazy one. Times like those call for wraps like these.

Pretty little lettuce wraps, made in bright purple radicchio leaves. A simple concoction of creamy white beans and flaky albacore, topped with a zingy fresh-herb vinaigrette. This is clean eating at it's finest (and simplest)(and fastest)(and easiest).

Perfect for light luncheons or quick-eat afternoons. Or a fine way to make a no-bake dinner on a hot summers night. 

Start to finish, you can have a platter full of radicchio wraps ready in 10 mins or less. Pair with a light beer or sparkling white wine and you'll be happy for days.

Tuna and White Bean Radicchio Lettuce Wraps

  • 1 (5 oz) cans albacore tuna
  • 1 cup white beans
  • 2 meyer lemons (juice and zest)
  • 1 head raddicio, leaves gently removed
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/2 shallot
  • 2 Tbsp raw honey
  • 1/4 cup parsley
  • 2 Tbsp fresh dill
  • 2 large leaves fresh basil
  • salt and pepper

Toss tuna, white beans, olive juice and zest together in a bowl. Salt and pepper lightly.  Fill radicchio leaves with mixture.

In a blender or mini food processor, combine olive oil, vinegar, shallot and honey until pureed. Add parsley, dill and basil. Drizzle over wraps. Salt and pepper to taste.
