Tuna and White Bean Radicchio Lettuce Wraps
- 1 (5 oz) cans albacore tuna
- 1 cup white beans
- 2 meyer lemons (juice and zest)
- 1 head raddicio, leaves gently removed
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1/2 shallot
- 2 Tbsp raw honey
- 1/4 cup parsley
- 2 Tbsp fresh dill
- 2 large leaves fresh basil
- salt and pepper
Toss tuna, white beans, olive juice and zest together in a bowl. Salt and pepper lightly. Fill radicchio leaves with mixture.
In a blender or mini food processor, combine olive oil, vinegar, shallot and honey until pureed. Add parsley, dill and basil. Drizzle over wraps. Salt and pepper to taste.
