No crust required. Grab a pineapple and give this gluten-free Paleo Pineapple Pizza a try. Quick, simple and real food approved, it's great as a quick dinner or midnight snack.
If you've been following me for any period of time, you know I prefer to eat paleo 100% of the time, but actually accomplish such about 14%. When it comes to quickfast meals, I always find myself reaching for ready-made and quick-prep foods, few of which are properly paleo.
So when an idea for a speedy paleo meal falls into my lap, I'm all sorts of game.
This recipe is one of those recipes. Incredibly simple. So simple, in fact, that you just sit and wonder "how did I not think of this beforrrrre?" and so delicious.
Like, delicious in the way that the kids all beg for seconds.
Delicious in the way that you don't have to talk yourself into believe it's delicious.
Delicious in the way that it's so insanely, deliciously clever, you can remember that this is a meal you love to make. And a meal you love.
And suddenly, you're eating paleo 101% of the time. Because you're eating Paleo Pineapple Pizza 110% of your existence.
Don't look at the numbers. I'm a food blogger, not a math blogger, dammit.

Paleo Pineapple Pizza (Gluten-Free)
6 servings | 20 mins
- 6 fresh pineapple rings
- 1 1/2 cups shredded mozzarella
- 6 slices black forest ham
- 2/3 cup organic pizza sauce
- 1/4 purple onion, diced
- 1/2 green bell pepper, diced or 1 diced jalapeno
- 1/4 cup fresh basil, chopped
Heat oven to 425ºF. Line a baking sheet with parchment paper.
Place pineapple on baking sheet. Top with a pinch of mozzarella, then place a slice of black forest ham atop each pineapple ring. (Note: I found it worked well to gently gather the ham in the center, creating a "bowl" where the sauce could be spooned).
Spoon sauce atop ham. Top with mozzarella, onion and bell pepper. Bake until bubbly, about 18-20 mins. Top with fresh chopped basil. Serve and enjoy!
