Parties are some of my favorite events to make food for. Somewhere in the back of my head, I've got this endless story that life should revolve around neighborhood potlucks and family picnics in the park. It's like, every day in Memorial Day in my brain. Or, at least, I wish everyday was Memorial Day.
So when, after 364 days of waiting, Memorial day is actually the next holiday on the horizon, there is no containing the excitement. Call the people! Shuck the corn! Fill the cooler! Grab all the red-white-and-blue things! Fill the cart with crackers!

Okay, now here's where we pause for a sec.
Because as much as I love the idea of a party, I am no red hot fan of the actual prep. I do not desire slicing, dicing or reading recipes. The simpler, the fresher, the better. I wanna feed a full crowd with 5 minutes of prep. I wanna put out platters, wow with a Pinterest-approved pretty party table, but still have time and energy to get out and mingle.
So that's where this delightful little platter comes in. Salted ricotta gets laced with honey, then piled onto a baking sheet with Crunchmaster gluten-free crackers and piles of beautiful berries. This dish is splendidly simple to put together. Feeds a crowd. And doesn't take all durn day to make. Win-win-wahhiinnnn.

Red, White and Blue Salted Honey & Ricotta Dip
12 servings | 15 mins prep
- 1 pint blueberries
- 1 pint blackberries
- 1 (15 oz) container whole milk ricotta
- 1/2 cup + 3 Tbsp raw honey
- 1 Tbsp sea salt flakes
- 2 Tbsp sliced almonds, toasted
- 1 package Crunchmaster™ Gluten-Free Multigrain Crackers, Sea Salt flavor
- 1 package Crunchmaster™ Gluten-Free Mulit-Seed Crackers, Original flavor
- 2 quarts strawberries, cleaned and dried
- 1 pound fresh cherries
- 2 pints raspberries
- fresh mint leaves for garnish
Line a large, deep-sided baking dish with parchment paper. Place blueberries and blackberries in a 3-5" bowl. Set bowl in the upper left corner of baking dish. Set aside.
In a large bowl, stir together ricotta, 1/2 cup honey and sea salt flakes. Spoon down the center of the prepared baking sheet (spreading lengthwise). Drizzle with 3 Tbsp honey, sprinkle with almonds. Arrange cherries, strawberries and raspberries down each side of the ricotta strip. Arrange Crunchmaster™ crackers on each side of the berries.
Garnish with mint leaves. Refrigerate until ready to serve.
